The Zesty Blueberry & Booze jam got rave reviews.
With Mackenzie taking home half of the production from yesterday there was nothing else to do but make another batch. In recreating the recipe from yesterday I realized that we may have shortchanged the amount of Disaronno in the first batch. That was definitely rectified in the second batch. It is lip smacking good!
Then I was going to start on some corn salsa but thought I would first take a trip out to the garden to see if there were enough hot peppers. And found a dozen or so cucumbers that needed processing.

With the corn salsa on hold, we started to process the cucumbers and peppers into relish. Suzanne with a knife and we with a mandela. The variety of textures will complement each other nicely.

Basing things loosely on a recipe from the internet I combined vinegar, spices, cucumbers, hot peppers and onions, simmering for 10 minutes while the jars sterilized. The result isn’t as spicy as I’d hoped but there is will lots of chance to experiment over the summer as more cucumbers ripen. And there will be lots.
Over all it was a very productive day.

Well, if the first batch got short changed with Disaranto, I can only imagine how amazing the second batch turned out! Looked to be a very productive harvest, indeed!
