The title says it all.
Thank you to Briarlea Kitchen for wonderful berries. The taste is out of this world and so much better than anything else I have ever tasted.
In preparation for the jam making, last night there was a taste test of possible flavour combinations. With friends over for supper, dessert came with the requirement to provide feedback. The berries hadn’t been mashed, which made a difference but we fumbled our way through it.
Our niece Mackenzie (check out her website Evolusi Yoga) wanted to help with jam making so we experimented with the winning flavour combinations from last night.
We started with a straight up blueberry with a bit of honey to sweeten the tartness of the berries. This was a traditional taste with lots of chunks of berries. It set well and was a overall winner.
The second batch included fresh lemon and lime juice as well as zest from both. This combination definitely took the taste up a notch.
The third batch was the pinnacle with, what else, booze. Half a cup of Disaronno added after the cooking process gave the perfect dose of almond flavouring. And a little honey to sweeten everything up. Unfortunately it yielded only four and a half jars. I may have to do another batch of this one.
The fourth batch was cinnamon and honey with just a hint of lemon. Not the sweet jam of your childhood but yummy none the less.
This used up most of the 8 quarts of berries we had purchased so the last chore of the afternoon was a trip back to Briarlea Kitchens to buy more berries. Maybe blueberry pie filling?

Had a taste of the boozy jam… tasted like I needed another! Lovely stuff – perhaps on toast with a coffee in the morning to watch the birds with? Damn… sounds like a plan!
