Radishes Galore

We’ve been eating radishes from our garden for about 6 weeks now, staggered planting is the key. But I overdid the last seeding and we ended up with way more than we could eat or give away. Plus they were getting too big and slightly woody.

What to do? Freezing, canning or pickling. Spoiler alert – canning doesn’t work with radishes as they turn to mush in the cooking process. We chose a combination of pickling and freezing. Most of them ended up in jars but the parts which were too small for the mandolin to cut were frozen. Unfortunately the pickles have to be kept in the fridge or, more likely, given away to fill up other people’s fridges.

The pickled radishes were incredibly tasty! They complimented our pasta and Mediterranean salad meal balancing the flavours with a bit of acidity. Feeling fortunate that we have a bit left for a snack later!
